Non-Cheese Veg: Terra vegan series by Nemo – Vol. 4 – uk english version

Non-Cheese Veg a journey into the most fascinating frontier of plant-based cuisine: fermentation and natural ageing. In this volume, Nemo explores the art of transforming oilseeds, legumes and ferments into complex preparations, rich in aromas, textures and flavours that do not imitate anything, but create a new, authentic and sustainable gastronomic language.
The book is the result of years of experimentation and research, demonstrating how cuisine can evolve without sacrificing taste and the pleasure of eating. These are not copies of traditional cheeses, but ‘non-cheeses’: plant-based specialities with their own identity, made with simple ingredients and natural processes of fermentation, drying and ageing. Each recipe becomes a small experiment in balancing technique and intuition, science and sensitivity.
The first sections introduce the reader to the basic principles: ferments, starters, equipment, safety, timing and temperature. Then we move on to fresh and quick-fermented products, ideal for those approaching the world of ferments for the first time. These are followed by matured and complex products, in which patience and precision transform cashews, lupins or almonds into products capable of astonishing depth and character.
The tone is clear and engaging, always faithful to the philosophy of the Terra Vegan by Nemo series: combining ethics, creativity and knowledge. Each recipe is accompanied by practical explanations, technical boxes and variations, so you can learn how to make genuine, light and flavourful foods at home. Self-production becomes an act of freedom, a way to reduce waste, respect the environment and rediscover slowness as a value.
Non-Cheese Veg not just a recipe book: it is a manifesto of awareness. It demonstrates that plant-based cuisine can be rigorous, poetic and modern at the same time. It is a book for those who love to experiment, for those who seek new flavours and for those who believe that the future of food lies in knowledge and respect for the Earth.
Volume after volume, the Terra Vegan by Nemo series is building a library of plant-based cuisine that tells the story of Italy through new eyes. This fourth chapter is perhaps the most technical and visionary, because it shows how fermentation can become art, and how cooking can once again be an act of creation.
